The French Revolution put an end to this system in France. The result for cooks or chefs was the loss of a job. Although it was better than losing their heads like the French Nobility had, it still put them at loose ends. They set about to create their own niche. Since cooking was what they knew, cooking was what they stayed with. They founded what became the first formal restaurants.
These restaurants did not offer common fare. They provided fine food served with elegance and style in restaurants across Paris. The tables were covered with pure white linen. The cutlery, china and glassware was the finest possible. The menus varied, but now, it was possible for a whole new class with wealth, or at least substantial money, to dine like the former aristocrats had.
The Idea Spreads
In the 19th century, the improved methods of transportation saw the spreading of the restaurant concept. In Paris, France, tourists and other travelers spent nights out in such fine establishments. Wealthy Europeans and Americans found themselves enjoying this French idea. Tourism continued to grow and the idea of restaurants was to be exported. In some cities, the fine dining experience was combined with luxury hotels to create an attractive package to those who could afford it.
By the time of the 20th century, not only were certain Paris Cafés famous, the idea ad been imported and adapted by countries overseas. Restaurants of various types had begun to pop up in North America. In America, some had even evolved into what are now known as fast food joints.
